Hi;
So I picked up some sliced pork belly. I wanted to try dry bringing. Use curing salt, salt and brown sugar. Put it on a rack and in the fridge. 3 days in when rotating position I noticed dark spots where the belly was touching the rack. The rack is green like rust. I cut out the spots and rubbed on some more curing salt. But I'm not sure if I can trust it.
